Preheat oven to 350 degrees F. Spray 12 muffin cups with non-fat cooking spray. You can use small individual foil cups and put on parchment lined cookie sheet as saves on cleanup.

Heat olive oil in nonstick skillet over med-high heat. Add onions, carrots, oregano and garlic and saute for 2 minutes. Remove from heat and let cool.

In a large bowl, combine onion mixture, ground beef, 1/2 cup ketchup, bread crumbs, mustard, Worcestershire sauce, pepper, salt and egg whites. I add in a few more spices to add extra flavor and sometimes use a little more ketchup.

Spoon Mixture into prepared muffin tins. Top each with remaining ketchup. Bake approx 25 minutes or until meat thermometer registers internal temperature of 160 degrees. Remove from oven and let stand for 5 minutes.
