Directions:

Chop sweet onion and tomatoes into small pieces

Heat oil in pan over medium heat and add onion, mushrooms and Tofurkey. Stir until heated through then place on low heat.

In a mixing bowl, mix together the cheese, eggs, greek yogurt, tomatoes and pancake mix. Stir until thoroughly mixed.

Add the vegetable/Tofurkey mixture to the mixing bowl and stir until thoroughly combined. Pour into well greased 9x12 baking pan or dish.

Bake at 350 degrees for 30 to 35 minutes, until cooked through.

Can be served with topping of French fried onions and/or avocado slices.
