Hard-boil, cool, and peel eggs and separate the whites from the yolks.

Place the yolks in a bowl or a food processor. Add mayonnaise, mustard, salt and pepper and blend in the food processor or by hand. Finely chop egg whites or briefly pulse egg whites until finely chopped in the food processor and then stir in the yolk mixture by hand.
